An Edomae sushi institution behind Nihombashi Takashimaya, with more than 140 years of history since it began as a street stall. Techniques such as vinegar-curing and simmering have been handed down as ways of bringing out the best in each ingredient, and the sushi rice is seasoned with red vinegar and salt alone. Nigiri sushi is ¥3,300, and at the counter you can watch the chefs at work. The shop closes as soon as the fish runs out.
