A long-established dried-goods store founded in Nihonbashi by a first-generation merchant from Ise, back in the days of Yoshimune, the eighth shogun. Built around katsuobushi (dried bonito), it also deals in kombu, shiitake and beans, and is trusted by ryotei restaurants and professional cooks across Tokyo. At the storefront you can compare three kinds of dashi — Kanto, Kansai and vegetable — for 440 yen a cup. The store was designed by Jo Nagasaka and Schemata Architects.
